We have sold our entire whisky stock. The next barrels will mature in mid 2025 at which time we will have ample stock to maintain regular availability.

Aged in a French Oak barrel that has held Australian Tawny for the last 50 years.

Barrel 8 is a 20 litre French Oak cask which previously stored Australian Tawny at Seppeltsfield Wines. This is a second fill barrel. The whisky has been maturing for 3 years and 6 months. There are hints of toffee, creme brulee, vanilla bean and old leather on the nose. The palate offers notes of butterscotch, caramel and honey.

It is only decanted when we deem the whisky to be at it's optimum.


Tastes Like We have sold our entire whisky stock. The next barrels will mature mid 20-25, at which time we will have enough to ensure a regular supply. Our whisky is matured for a minimum of three years, mainly in French Oak Casks which have held Australian Tawny for the last 50-70 years. This will be our last barrel available until mid 2025.

General consensus within the industry is that 20 litre barrels require 2 years, however each barrel is different and we will only release the barrel once we feel it has reached its optimum. Generally we like to mature over three summers so all of our small cask will be at least three years old

We installed a new pot-still at the start of 2022 so we will have a steady supply of whisky from mid 2025. There will be some limited releases before then. Get in touch to put your name on the waiting list to secure a bottle.
